Breakfast and Veggies.
If you are on a journey to become healthy, then one thing you need to know is Breakfast is what champions are made of!, well In my book at least. To me breakfast is hands down one of the most important meals of the day. I L-O-V-E breakfast foods.
Mark is also a big breakfast eater! He wakes up at least thirty minutes earlier than he has to just to make a nice big breakfast for both of us. Even if i'm sleeping in that day, he will leave me food on the stove. It's incredibly sweet. I feel so spoiled.
Here is a simple breakfast, that will fill you up, and give you energy.
Scrambled Eggs, Sausage and Veggies
- 2-3 eggs
- 1 tsp. Coconut Oil/butter
- Dash of salt/pepper/ garlic salt ( to taste)
- 1 small sweet potato sliced thinly, and halved
- 1 small potato sliced thinly, and halved
- 1/4 C. Onion chopped
- 1 handful of arugula ( or however much you think is good)
- A small portion of turkey sausage ( add as much as you'd like)
- Half a bell pepper chopped
- Cheese, optional
Directions:
1.Chop up all vegetables, to the desired amount and size you'd like, mix them together in a bowl, and save the rest for future breakfasts.
2.In a frying pan, cook turkey sausage in small pieces, set aside.
3. In another frying pan, heat up the coconut oil or butter on medium high heat.
While oil/butter is heating up, scramble eggs.
4. Once the oil/butter is hot add the amount of vegetable mix you'd like, let cook for a few minutes, until veggies are starting to wilt.
5. Add turkey sausage, and eggs. Season with salt, pepper/garlic salt to taste. mix in cheese when eggs are starting to look near being done. make sure to constantly stir, so that everything cooks evenly.
This is the type of Sausage we have been using. It's so good, and doesn't have the fat chunks that regular sausage has. I can't even tell it's turkey.

These pancakes are seriously, so good! We buy a big box of them from Costco for like $7 dollars. It's a killer deal.
~Things to know about these amazing pancakes, for 1/2 a cup of pancake batter, which is the serving size, you get 190 calories, zero fat calories, 5g of fiber, and 14g of protein.
Mark and me like to add berries to them, or chia seeds into the batter. We top them off with either, peanut butter and honey, raspberry jam ( all natural) or the kodiak syrup, which has no High fructose corn syrup in it.
This Syrup is so tasty. Yes it is still syrup, so no it's not exactly healthy, but all things in moderation, and if you have to pick your poison, choose something with natural ingredients, and no high fructose corn syrup.

I am kind of a food snob, I am really picky most the time about what I put into my body, and I like to judge a food by it’s ingredients label, but, the ultimate way I tell if I liked it or not is how I feel after I ate it. Do I feel heavy? Is my stomach hurting, am I bloated? ect… After eating these pancakes, I feel good.
An added bonus is that they stick with me throughout my day. I feel like they are a really good thing to eat before doing a hard, weight lifting workout at the gym, too, and provide you with a protein punch, and dietary fiber, which is so important for healthy colon function. These pancakes have become a regular item in our pantry, and I think they’re going to stay there.
